Amphitryons Digital was born of a thirty‑five‑year journey through the Culinary.
Trained in the French houses, brought into the craft by a two‑Michelin‑star Parisian table led by a Meilleur Ouvrier de France, Pascal Henrot spent nearly twenty‑five years at the highest world level : the brigades of the great hotels of Paris and Brussels, within starred teams, then the first head‑chef positions. In 2000 he joined the three‑star kitchens of Georges Perrier in Philadelphia, then among the foremost tables of the United States. In 2004 he embarked as executive chef aboard the Diamant, the ship with which Compagnie du Ponant opened its polar routes, and led the gastronomy of its first Antarctic seasons. Saint Petersburg followed, where he launched a starred‑level restaurant and was distinguished among the Best French Chefs of Russia.
Luxembourg opened the entrepreneurial chapter. Arriving as culinary consultant to a former starred house turned luxury brasserie, he was called upon by its owner to found a company and lead it : the brasserie, the creation of a wine library, then a premium fast‑casual concept. Twelve years, thirty employees, six million euros in annual revenue, and from the fifth year onward the entry of investors and the conduct of a board. Then came three years directing an industrialised food‑service concept carried from zero to two million euros, two thousand dishes a day, where artificial intelligence entered the daily running of the business, from stock to delivered plate.
From this crossing came a rare double competence : the Culinary at the highest level, and the development of artificial intelligence applied to its trades, self‑taught and since recognised by the admission of Amphitryons Digital to the Google for Startups and Microsoft for Startups programmes. The Culinary was waiting for its houses. The founder built them himself.
